June 20 • History of Wheat & Cooking Session • Rala Ziadeh
Wheat, one of the oldest and most important cereal crops, has a long history tracing back to ancient times. Yet, it continually emerges as a lifeline in our current day. Join Rala Ziadeh, the Aleppan chef, entrepreneur, and natural storyteller (حكواتية) behind Lammeh for a cooking session around the significance of wheat in the Levant (بلاد الشام). Participants will knead the dough of manakeesh, flatbreads topped with zaatar, cheese, or muhammara, and cook it on a saj.
